Chicken Divan
Donna Smith
Broccoli and chicken topped with three cheeses and a rich, creamy sauce.
Ingredients
1 package (10 ounces) frozen broccoli
2 tablespoons margarine
3 tablespoons flour
1 cup milk
2 teaspoons lemon juice
1/2 cup grated Parmesan cheese
2 cups cooked, shredded chicken
1 cup grated Swiss cheese
1 cup grated cheddar cheese
Directions
Cook the broccoli and drain well. Arrange in a shallow baking dish.
For the sauce, melt the margarine in a saucepan. Stir in the flour, then add the milk and lemon juice. Cook, stirring, until bubbly.
Pour half the sauce over the broccoli. Sprinkle with half of the Parmesan and cheddar, then top with the chicken and all of the Swiss cheese. Pour remaining sauce over top, then add the rest of the Parmesan and cheddar cheese. Bake at 350 degrees F for about 20 minutes.
