Chicken (or Turkey) Chop Suey
Recipe is from Quick & Healthy Volume II (ScaleDown Publishing,1995) by Brenda J. Ponichtera
Ingredients
1 pound skinless, boneless chicken breasts, cut in strips (or 2 cups cooked, cubed chicken or turkey)
2 cups sliced celery
1 cup sliced onion
1 cup chicken broth, fat removed*
1 tablespoon soy sauce
1/4 teaspoon salt (optional)
2 1/2 tablespoons cornstarch
1/4 teaspoon ginger
1 tablespoon molasses
1/4 cup water
1 can (16 ounces) bean sprouts, drained (or 1 1/2 cups fresh)
*Sodium is figured for reduced-salt.
Directions
Spray a large frying pan with nonstick cooking spray and brown chicken (if using cooked meat, there is no need to brown). Add celery, onion, broth, soy sauce and salt (optional). Cover and simmer for five to 10 minutes.
Meanwhile, mix cornstarch, ginger, molasses and water. Stir into hot mixture and cook until thickened. Add bean sprouts and heat thoroughly. Serve over noodles or quick-cooking brown rice.
Note: Optional ingredients are not included in the nutritional analysis.
