Low-fat Basil Chicken Breasts
Ingredients
4 skinless, boneless chicken breast halves
1/3 cup low-fat plain yogurt
1/4 cup fresh, chopped basil
1 teaspoon cornstarch
1/2 cup soft breadcrumbs
2 tablespoons freshly-grated Parmesan cheese
Directions
Place the chicken in a 13x9-inch baking dish. Set aside.
Combine the yogurt, basil and cornstarch. Spread over the chicken. Sprinkle with the breadcrumbs and Parmesan cheese.
Bake at 375 degrees F for about 30 minutes.
Suggestions
Serve with a salad with low-fat dressing and steamed asparagus.
