Mardi Gras Chicken
A festive, colorful main dish.
Ingredients
6 boneless, skinless chicken breasts
2 cups Italian dressing
3 tablespoons Cajun seasoning
1/4 cup green bell pepper, julienned
1/4 cup yellow bell pepper, julienned
1/2 a red onion, sliced into rings
2 tablespoons butter
Directions
Put the chicken in a baking pan. Mix the dressing and Cajun seasoning together and pour over chicken. Marinate in the refrigerator at least four hours, or overnight. Remove the chicken from the marinade. Discard the marinade. Grill the chicken breasts about six minutes or each side, or until done. While they are cooking, saute the peppers and onion in the 2 tablespoons butter until crisp-tender. Pour over chicken and serve immediately.
Suggestions
Can be served over white rice or egg noodles.
