Momma's Famous Fried Chicken

iParenting's Mom of the Month shares a family favorite!
Ingredients
6 to 8 pieces of chicken (fully thawed)
3/4 cup of your favorite ranch dressing
2 tablespoons water
4 cups of plain cornflakes, crumbled
1/2 tablespoon salt
1/2 tablespoon pepper
1/4 cup flour
Oil for frying
1 tablespoon hot sauce (optional)
Directions
In a large bowl add chicken pieces. Pour the ranch dressing over the chicken. Add the water. You can also add a tablespoon of hot sauce for a little kick. Mix well and set aside.
Use a large Ziploc bag and a kitchen hammer to crunch the cornflakes into smaller pieces. When the cornflakes are crunched up add the flour along with the salt and pepper.
Add oil to a large pan and heat until a drop of water added to the oil sizzles and pops. Sprinkle the cornflake mixture on a large plate. Using one hand for the wet mixture and one hand for the dry, take a piece of chicken from out of the bowl, let excess ranch drip off, then place onto the plate of cornflakes and coat well. Remove the chicken with your dry hand and place into the pan of oil. Repeat with the remaining pieces of chicken.
Fry chicken until golden brown on the outside and completely cooked on the inside.
Suggestions
Serve with your favorite side dishes. Mattingly's is rice with chicken gravy and steamed vegetables.
