Almond Fried Rice
Ingredients
2 tablespoons oil
1 cup sliced green onions with tops
1/2 cup diced red bell pepper
2 cloves garlic, minced
1 egg, beaten
1 cup diced cooked ham
3 tablespoons soy sauce
1/2 cup slivered almonds
3 cups cold cooked rice
Directions
Heat the oil in a skillet or wok over medium-high heat. Add the green onions, garlic and the bell pepper. Cook, stirring, for one minute. Add the egg and stir until cooked. Add the rice and cook until heated through. Add ham and soy sauce. Cook until ham is hot. Stir in almonds and serve.
Suggestions
If desired, you can toast the almonds before adding them to the rice.
