Avocado Rice
Ingredients
1 cup long-grain white rice
1 onion, chopped
1/4 cup chopped jalapeno peppers
3 tablespoons butter or margarine
2 cups chicken broth
1/2 to 1 teaspoon ground cumin
1 ripe avocado, peeled, seeded and cut into cubes
1/2 cup salsa or pico de gallo
1/4 cup chopped fresh cilantro
Directions
Melt the butter in a skillet. Cook the onion, jalapeno and rice until onion is soft. Add the chicken broth and cumin. Bring to boil, then reduce heat to low and simmer, covered, 20 to 25 minutes. Gently fold in avocado, salsa and cilantro.
Suggestions
Serve with grilled chicken breast and corn tortillas!
