Creamy Green Rice
Ingredients
1 1/4 cups uncooked, long-grain rice
2 1/2 cups water
1 package (10 ounces) frozen spinach, thawed and squeezed dry
1 egg, lightly beaten
1 can (12 ounces) evaporated milk
1 cup shredded Monterey Jack cheese
2 green onions, chopped
Directions
Bring the water to boil. Add the rice, cover and reduce heat to low. Cook 20 minutes.
Combine the cooked rice, spinach, egg, milk and cheese in a bowl. Mix well. Pour into a buttered 2-quart baking dish. Bake at 350 degrees F about 30 minutes. Garnish with the green onions.
