Jalapeno Rice
Ingredients
3 cups cooked rice
2 bunches green onions, chopped
1/2 small onion, chopped
1 jalapeno pepper, finely chopped
1/2 stick butter
1 can chopped green chiles
2 cups sour cream
2 cups Monterey Jack cheese
Directions
Cook the onion and jalapeno in the butter until soft. Add all the ingredients except 1 cup of the cheese. Pour into a lightly greased casserole. Top with cheese. Bake for 30 minutes at 350 degrees F.
Suggestions
Great with grilled chicken breast or shrimp.
