Stir-Fried Rice

This recipe can be a side or main course, depending on what you choose to add to the basic recipe. A great way to use left-over rice.
Ingredients
2 cups dry white rice, prepared according to package directions
1 egg
1/4 to 1/2 cups chopped scallions
1/4 teaspoon black pepper
2 tablespoons soy sauce or tamari (or to taste)
Options:
Water chestnuts
Bamboo shoots
Canned or frozen carrots, peas or corn
Steamed red peppers, carrots or zucchini
Cooked chicken
Directions
Heat oil in wok or large saute pan. Crack egg in heated oil and cut into small pieces with spatula. Add scallions and stir for a moment. dd rice, then soy sauce and pepper, and stir thoroughly. Add more soy sauce to taste.
Suggestions
Serve with broiled salmon with teriyaki sauce.
