Sweet and Crunchy Couscous

Couscous is a great food to eat as a meal, a salad or a side dish. In this dish, the sweet raisins and toasted almonds make an alluring combination.
Ingredients
1 box couscous
1 can low-fat, low-sodium chicken broth
2 tablespoons olive oil
1 medium sweet potato, diced
1/2 cup sliced almonds, toasted until light brown
3/4 cup raisins
Instead of sweet potatoes, almonds and raisins, try the following ingredients:
Zucchini, sauteed
Eggplant, sauteed
Asparagus, steamed
Toasted walnuts
Dried apricots or currants
Chicken, diced and cooked
Directions
Prepare couscous according to the directions on the box, substituting chicken broth for water, if desired. Fluff with fork and set aside in bowl.
Cook sweet potato in microwave in a covered dish with a little water (about five minutes) or saute in olive oil until soft. Add sweet potato, raisins and toasted almonds to couscous. Mix well. Serve warm.
Suggestions
Place almonds on toaster tray and toast lightly. They start to turn brown very quickly – you'll smell them. Remove immediately from tray and cool.
