Artichoke Slaw
Ingredients
3 cups shredded cabbage
1/2 cup chopped red bell pepper
1/4 cup chopped green onions
3 tablespoons mayonnaise
1 jar (6 ounces) marinated artichoke hearts, reserving liquid
Pepper, to taste
Directions
Combine the drained liquid from the artichoke hearts, mayonnaise and pepper to taste. Mix well. Set aside.
In a large bowl, combine the cabbage, red bell pepper, green onions and chopped artichoke hearts. Pour dressing over and toss to coat.
