Better-Than-Deli Tuna Salad
Recipe from The Thin Commandments Diet: The 10 No-Fail Strategies for Permanent Weight Loss by Stephen Gullo, Ph.D. (Rodale, 2005)
Fresher, leaner and full of crunch – you'll swear off deli tuna salad after enjoying this slimmed-down version.
Ingredients
1 can (3 ounces) water-packed tuna, drained and flaked
1 hard-cooked egg white, chopped
1/4 cup each finely chopped red and green bell peppers
1/4 cup chopped celery
2 to 3 tablespoons chopped dill pickle
1 1/2 tablespoons light mayonnaise
1 tablespoon chopped red onion
Salt and freshly ground pepper, to taste
Directions
In a salad bowl, combine all ingredients and stir with a fork to blend well. Serve immediately, or cover and refrigerate until ready to serve. Makes one serving (1 1/2 cups).

Per serving: 230 calories, 10 g fat, 2 g saturated fat, 25 g protein, 9 g carbohydrates, 1 g dietary fiber, 45 mg cholesterol, 810 mg sodium
