Bok Choy Salad with Asian Vinaigrette
Ingredients
Dressing:
1/2 cup water
1/4 cup white sugar
Juice of one lemon
3 tablespoons soy sauce
1/3 cup olive oil
Salad:
2 small heads of bok choy, cut into bite-sized pieces
1 bunch green onions, chopped
1/2 cup slivered almonds
1 can (5 ounces) chow mein noodles
Directions
Combine the water and sugar in a saucepan. Bring to boil, reduce heat, and cook three minutes, stirring constantly. Remove from heat and add the lemon juice, soy sauce and oil. Cool. Keep in the refrigerator until ready to dress salad.
In a large bowl, combine the bok choy, green onions, almonds and chow mein noodles. Toss with dressing and serve immediately.
