Caesar Salad with Herb Crusted Croutons

Ingredients
Croutons:
1 fat-free baguette, cut into 1/2-inch slices or a loaf of fat-free bread
2 tablespoons chopped fresh basil or 1 tablespoon dried
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh parsley
1 teaspoon granulated garlic
Canola oil cooking spray, preferably garlic-flavored
Caesar Dressing:
1 clove garlic, peeled (should equal 1/2 teaspoon chopped)
1/2 cup low-fat silken tofu
1/3 cup water
1/4 cup fresh lemon juice
1 tablespoon white miso paste
2 teaspoons Dijon mustard
1 tablespoon Parmesan-style soy cheese or whey powder
1 1/2 teaspoons granulated garlic
1 teaspoon granulated onion
1/4 teaspoon cracked black pepper
1/4 teaspoon Worcestershire sauce
Salad:
1 head romaine lettuce
1 cup herb croutons
1 tablespoon Parmesan-style soy cheese
1/2 cup Caesar salad dressing
Directions
Preheat oven at 350 degrees F.
To make croutons, cut bread slices into 1-inch squares with serrated knife. Place squares in a bowl. Add basil, rosemary, parsley and garlic to bowl and toss well. Spray a baking sheet once with cooking spray. Place croutons on sheet and bake in preheated oven until croutons are light brown, about 20 minutes. Use right away or cool to store.
To make dressing, place garlic in a food processor fitted with a metal blade and chop fine. Scrape down sides of work bowl. Add remaining ingredients and process until smooth.
To make salad, wash romaine and dry by patting with paper towels or in a salad spinner, and tear into bite-size pieces. Place lettuce, croutons, soy cheese and dressing in a bowl and toss. Serve.
