Caesar Vinaigrette
Andrew Goldfarb
This makes enough dressing for a few salads, and is easy to vary depending on what you have in your kitchen or heart.
Ingredients
2 cloves crushed garlic
1 teaspoon dry mustard
1 teaspoon ground pepper
Juice of 2 lemons
12 tablespoons olive oil
6 tablespoons balsamic vinegar
2 tablespoons balsamic vinegar
1 1/2 tablespoons soy sauce
A little anchovy paste
Directions
Put all ingredients in the blender or shake/stir well. Shake well before serving, and keep refrigerated after serving.
Suggestions
Take dressing out of refrigerator about 30 minutes before dinner so it won't have globs. Or put it in the microwave for a few seconds before dressing salad.
