Chicken Caesar Pasta Toss
Ingredients
1 pound penne pasta
1 tablespoon olive oil
1 1/2 pounds skinless, boneless chicken breasts, cut into 1-inch cubes
1 bottle (8 ounces) Caesar salad dressing
1/4 cup red wine vinegar
1/2 cup grated parmesan cheese
1 head romaine lettuce, shredded
1 tomato, chopped
Salt and pepper, to taste
Croutons
Directions
Cook the pasta according to package directions. Drain. Set aside.
Heat the olive oil in a skillet. Add the chicken, seasoned with salt and pepper, if desired. Cook until done, about five to six minutes. Remove from skillet and add to a large bowl. Let it cool slightly.
Add the Caesar dressing, vinegar, cheese, pasta, lettuce and tomato. Toss to combine. Season with salt and pepper to taste. Garnish with some croutons, if desired.
