Dressing: 1/3 cup olive oil 2 tablespoons lime juice 2 tablespoons chopped cilantro 1 ½ teaspoons sugar 1 teaspoon minced garlic ½ teaspoon chili powder ¼ teaspoon pepper Salad: 1 can black beans, rinsed 1 can Mexicorn, drained 1 red bell pepper, julienned ½ cup sliced green onins Lettuce 2 cups cooked chicken meat |

Combine the black beans, Mexicorn, red bell pepper, green onions and chicken in a bowl. Mound this mixture onto lettuce-lined plates. Drizzle the dressing over and serve. |
