Crabby Potato Salad
Ingredients
5 pounds red potatoes
2 bunches green onions, chopped
1/4 cup chopped dill pickles
1 1/2 to 2 cups mayonnaise
1 package dry Ranch dressing mix
1 pound crabmeat or imitation crabmeat
Salt and pepper, to taste
Directions
Cook the potatoes in boiling, salted water until tender. Drain and cool.
While the potatoes cook, combine the mayonnaise and Ranch dressing mix. Set aside.
In a large bowl, combine the cooled potatoes, onions and pickles. Add the prepared dressing and crabmeat. Fold gently to combine. Season with salt and pepper to taste. Cover and refrigerate until ready to serve.
