Crabmeat and Pasta Salad
A perfect summer meal!
Ingredients
1 package rotini pasta
1 cup broccoli florets
2 cups fresh crabmeat, or 2 cans crabmeat, drained
1 small red bell pepper, chopped
1/2 cup chopped green onions
Dressing:
1/4 cup red wine vinegar
2 cloves garlic
1 teaspoon dried oregano
1/4 teaspoon lemon-pepper seasoning
1/4 teaspoon seasoning salt
3/4 cup olive oil
Pepper, to taste
Directions
Cook the pasta according to package directions. Drain and set aside.
In a bowl, combine the pasta, broccoli, red bell pepper, green onions and crabmeat. Stir lightly to combine.
Put the garlic, oregano, lemon-pepper seasoning, salt, pepper and red wine vinegar in a blender. Turn the blender on and slowing add the oil. Pour over salad and toss to coat.

Makes four servings.
