Cucumbers in Sour Cream
Julia Rosien
Ingredients
6 cucumbers
Pinch salt
3/4 cup sour cream
1/3 cup chives, minced
Salt and pepper, to taste
Directions
Peel fresh cucumbers. Cut them in half lengthwise and remove seeds. Slice cucumbers as thin as you can. Place them in a colander; add a little salt and mix. Place colander in a large bowl and refrigerate cucumbers for three to four hours.
Take out of refrigerator and with a towel apply pressure on cucumbers so as to remove excess water. Make them as dry as possible.
Put cucumbers in mixing bowl, add sour cream and chives, and mix well. Season with salt and pepper to taste.
