Fruited Chicken Salad in Avocado Halves

1/2 cup low-fat sour cream
1 teaspoon honey
1/4 teaspoon ground ginger
2 cups diced, cooked chicken
1 can (8 ounces) pineapple in juice
1 cup seedless grapes
1/2 cup sliced almonds
1/2 cup diced celery
2 ripe avocados, cut in half and pit removed
Lettuce leaves
Chopped green onions

Drain pineapple and reserve the juice. Combine 2 tablespoons of the pineapple juice with the sour cream, honey and
ginger. Stir to combine.
In a large bowl, combine the chicken, grapes, pineapple, celery and almonds. Stir in dressing. Cover and chill about one hour. Spoon mixture into avocado halves. Place on a
plate lined with lettuce and garnish with chopped green onions.
