Thai Beef Salad
KK Patton
iParenting's Mom of the Month shares a favorite recipe.
Ingredients
1 head iceberg lettuce, chopped
3 chili peppers, diced/seeded
1 chopped onion
1 clove minced garlic
1 orange, peeled and chopped
1/4 cup chopped cilantro
1 tablespoon oil
1 1/2 pounds sirloin steak, sliced thin
3 tablespoons low-salt soy sauce
3 tablespoons brown sugar
Directions
Mix soy sauce and brown sugar in a small bowl. Arrange lettuce on a plate. Heat part of the oil in a large skillet over medium-high heat until hot. Stir-fry beef until browned on the outside. Spoon over the lettuce. Add the remaining oil to the pan and cook chili peppers, onions and garlic until softened, about one minute. Add the soy sauce mixture and bring to a boil, stirring. Remove from the heat and stir in orange and cilantro. Pour mixture over the lettuce and beef.
