Waldorf Salad

A delicious side salad when you need a break from lettuce.
Ingredients
2 apples (a tart apple such as a Granny Smith), chopped
5 celery stalks, chopped
2 handfuls chopped walnuts(big pieces are OK)
1 to 2 heaping tablespoons egular or reduced-fat mayonnaise
1/4 cup pineapple juice
Directions
Mix all ingredients in a bowl and serve with almost any meal. You might want to leave out the walnuts in a portion of the salad if your kids aren't nut lovers. If you can, make the salad a few hours to a day before you plan to serve it.
Suggestions
Don't throw away the juice from the canned pineapple slices you feed your child! Save it and use it in this recipe.
