Chicken Salad with Carrot and Potato

Sounds strange, but it is delicious!
Ingredients
1 pound skinless, boneless chicken breast, cooked and shredded
4 or 5 new potatoes
1/2 bag baby carrots
1 small jar mayonnaise, or to taste
Salt and pepper, to taste
Directions
Cut the carrots and potatoes into small pieces. Cook in boiling water until just tender. Drain and cool.
In a bowl, combine the shredded chicken, potatoes, carrots and mayonnaise to reach desired consistency. Season with salt and pepper.
Suggestions
Serve on a bed of lettuce or as a sandwich filling.
