Eggless Egg Salad
Egg salad without the eggs!
Ingredients
1 pound firm tofu, diced
2 tablespoons minced green onion
1 tablespoon minced celery
2 tablespoons mayonnaise (can use vegetarian)
1 tablespoon sweet pickle relish
1 teaspoon vinegar
1 teaspoon mustard
1 teaspoon white sugar
1/4 teaspoon dried dillweed
Salt and pepper, to taste
Directions
Combine all the ingredients except tofu. Mix well. Gently stir in tofu. Season with salt and pepper to taste. Chill until ready to serve.
Suggestions
Serve on crisp hoagie rolls, or on lettuce-lined plates.
