Baked Flounder with Crumb Topping
Ingredients
1 1/2 pounds flounder filets (haddock also works well)
4 tablespoons champagne vinegar
2 tablespoons olive oil
2 tablespoons minced green onion
2 cloves garlic, minced
1/2 cup fresh, soft breadcrumbs
1 cup grated sharp white cheddar cheese
1 tablespoon butter, softened
1 teaspoon Dijon mustard
Directions
Combine the vinegar, oil, green onion and garlic in a shallow bowl. Add the fish and allow it to marinate at least two hours in the refrigerator.
Combine the breadcrumbs, cheese, butter and Dijon mustard.
When ready to bake, place the fish in a lightly-greased baking dish. Top with the breadcrumb mixture. Bake at 450 degrees F for 10 to 15 minutes or until fish flakes easily with fork.
