Broiled Red Snapper Packets
Ingredients
1 tablespoon butter or margarine, melted
4 red snapper fillets, about 4-6 ounces each
1 tablespoon lemon juice
Chopped fresh parsley
Salt and pepper, to taste
Directions
Tear out four sheets of aluminum foil about 10 inches square. Divide the melted butter on each piece to coat. Place a fish fillet on each, then sprinkle with the lemon juice, parsley, salt and pepper. Fold the foil to make a packet. Arrange on a baking sheet and bake at 375 degrees F for about 10 to 15 minutes. Cut slit in top and serve.
Suggestions
Serve with fresh asparagus or potatoes.
