Broiled Salmon

This fish is easy and quick to prepare. The soy sauce makes it crispy and the mustard gives it a zing. You can always leave the kids' portions plain or put teriyaki sauce on them. Great for last-minute entertaining or a special family dinner.
Ingredients
Salmon fillets (about 1/2 pound per serving)
Grainy Dijon mustard
Soy sauce
Directions
Preheat broiler and move shelf so that heat source is approximately 4 inches away. Wash salmon fillet, pat dry with paper towel and place skin-side down in a shallow baking pan. Brush top of fish slices with generous coating of mustard. Sprinkle soy sauce over each piece and broil for 10 to 12 minutes. Don't flip the fish during cooking.
Suggestions
Other variations:
Use teriyaki sauce instead of soy sauce
Use soy sauce alone for a crispy texture
Coat with honey, brown sugar, and melted butter, then broil
Top with chopped parsley, fresh chives, and fresh dill
Broil and serve with sauce of 2 tablespoons mayonnaise and 1 tablespoon mustard
Broil and serve with sauce of 1 cup plain yogurt plus 1 tablespoon dill
