Fish and Broccoli Bundles
Mary Ann Turner
Broccoli and cheese wrapped up in a fish fillet and baked with a buttery topping.
Ingredients
6 large spears fresh broccoli
6 cubes Monterey Jack cheese
6 sole, flounder or whitefish fillets
1/4 teaspoon lemon pepper seasoning
1/3 cup melted margarine
2 teaspoons lemon juice
2 to 3 cloves garlic, minced
Salt and pepper, to taste
Directions
Cook the broccoli in boiling water until crisp-tender, about three minutes. Drain. On each fish fillet, place a broccoli spear and a cube of cheese. Wrap up and secure with a toothpick. Place on a foil-lined baking sheet. Sprinkle with the lemon pepper seasoning. In a small bowl combine the melted butter, garlic, lemon juice and salt and pepper. Pour over fish. Bake at 350 degrees F for about 15 minutes.
