Fish and Chips
Ingredients
Potatoes:
4 medium baking potatoes, peeled and cut into c-inch strips
Olive oil cooking spray
Salt and pepper
Fish:
1/2 cup flour
1/4 teaspoon pepper
1 egg
2 tablespoons water
1 cup crushed cornflakes
1/4 cup grated parmesan cheese
Cayenne pepper
1 pound haddock or whitefish fillets
Directions
Spread the potatoes out onto a cookie sheet. Spray with olive oil spray, tossing to coat all sides. Sprinkle with salt and pepper. Set aside.
Combine the flour and pepper in a shallow bowl. In another bowl combine the egg and water. In another bowl combine the cornflake crumbs, cheese and cayenne. Dip the fish into the flour, dip into the egg mixture, then coat with crumbs. Place on a lightly greased baking dish.
Place the potatoes into a 425 degree F oven for 15 minutes. Add fish to oven and continue baking another 15 minutes.
Suggestions
Serve with tartar sauce or malt vinegar.
