FitAndBusyDad's Simple Salmon

Ingredients
4 to 6 single serving salmon fillets, skin on (good quality – wild or sashimi grade is best)
Extra virgin olive oil
Coarse salt
Fresh black pepper
Lemon and/or capers for garnish
Directions
Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil. Wash salmon and pat dry. Lay salmon, skin side down, on aluminum-lined baking sheet. Brush salmon with olive oil and sprinkle with salt and pepper to taste.
Bake salmon 20 minutes on middle rack. With five minutes remaining, turn broiler on and transfer salmon to top rack. Broil salmon for remaining five minutes (or until juices run clear) and the flesh starts to turn golden brown. Remove immediately and slide lifter between salmon flesh and skin. Plate and serve.
Suggestions
If done correctly, salmon skin will stick to the aluminum foil allowing for minimal cleanup and post-dinner scouring/scrubbing!
