Flounder with Lemon and Chives
Ingredients
1 tablespoon olive oil
4 flounder fillets, about 4 to 6 ounces each
1/2 cup flour
1/2 cup low-sodium chicken or vegetable broth
2 tablespoons lemon juice
2 tablespoons chopped parsley
1 teaspoon chopped, fresh chives
Salt and pepper, to taste
Directions
Season the fillets with salt and pepper. Dredge in the flour.
In a skillet, heat the olive oil, and cook the fillets two to three minutes per side or until cooked through. Remove to a serving platter.
To the same skillet, add the broth. Bring to a boil and cook until it reduces by half. Add the lemon juice, chives and parsley. Season with salt and pepper. Pour over the fish and serve immediately. Serves four.
