Flounder with Shredded Vegetables
Ingredients
6 flounder fillets
1/4 teaspoon ground ginger
1/4 cup soy sauce
2 tablespoons rice wine vinegar
3 cloves garlic, minced
1/4 cup dry white wine
1 small head Chinese cabbage, shredded
2 to 3 carrots, cut into thin strips or grated
1 red bell pepper, thinly sliced
1 onion, thinly sliced
Directions
Combine the olive oil, soy sauce, ginger, vinegar, garlic and wine. Season with salt and pepper. Pour over sliced vegetables and toss to coat.
Line a 13x9-inch baking pan with aluminum foil. Place founder fillets in pan. Top with the vegetables. Cover tightly with another piece of aluminum foil. Bake at 375 degrees F for about 20 minutes, or until fish flakes easily with a fork.
Suggestions
Cod, haddock, or whitefish can be substituted.
