Fried Catfish Fillets
Ingredients
1 egg white
1 cup cornmeal
1 cup milk
1 teaspoon salt
1/2 teaspoon garlic powder
1/4 to 1/2 teaspoon cayenne pepper
1/8 teaspoon pepper
4 to 6 catfish fillets
Oil for frying
Directions
Beat the egg white in a bowl until foamy, then add the milk. In another bowl, combine the cornmeal, salt, garlic powder, cayenne and pepper. Dip the fillets into the milk mixture, then into the cornmeal mixture. Heat about 1/4-inch of oil in a frying pan. Fry the fish over medium-high heat for about three minutes per side, or until it flakes easily with a fork.
Suggestions
Serve with cole slaw and french fries for a complete meal.
