Mussels with Red Wine Vinaigrette
Ingredients
2 dozen mussels, cleaned
1 red bell pepper, seeded and diced
1 yellow bell pepper, seeded and diced
1/4 cup chopped green onion
1/2 cup olive oil
1/4 cup red wine vinegar
1 tablespoon chopped flat-leaf parsley
Salt and pepper, to taste
Directions
Combine the diced peppers, green onion, olive oil, vinegar, parsley, salt and pepper. Mix well. Set aside.
Add 2 cups of water to a large pot. Bring to boil. Add the mussels, cover and cook until they open up, about four minutes. Drain mussels and pour into a bowl. Pour the vinaigrette over the top. Serve.
