Apple-Raisin Stuffing
Ingredients
7 cups soft bread cubes
1 cup golden raisins
3/4 cup margarine
1 cup chopped onion
2 large ribs celery, chopped
2 cloves garlic, minced
1 cup chicken broth
2 large Granny Smith apples, cored and chopped
1/4 cup chopped fresh parsley
1 1/2 teaspoons salt
Pepper, to taste
Directions
In a large bowl, combine the bread cubes and the raisins. Set aside.
In a skillet, cook the onions, celery and garlic in the margarine until soft, about five minutes. Stir in the chicken broth and bring to boil. As soon as it boils, remove from heat and add to the bread cube mixture. Stir to combine. Add the apples, parsley, salt and pepper to taste. Toss gently to combine. Pour into a lightly-greased 2-quart baking dish. Bake at 350 degrees F for 35 to 40 minutes or until lightly browned on top.
