Artichoke Casserole
Ingredients
2 tablespoons olive oil
1 small onion, chopped
2 cloves garlic, minced
1 cup fresh, sliced mushrooms, sliced
2 cups canned artichoke hearts, quartered
1/4 cup lemon juice
1/4 cup milk
1/2 cup soft breadcrumbs
1/2 cup parmesan cheese
Salt and pepper, to taste
Directions
Heat the olive oil in a skillet. Add the onions and garlic and cook until onions are almost tender. Add the mushrooms and cook until soft. Add the artichokes, lemon juice, milk, salt and pepper. Mix well. Pour into a 13x9-inch baking pan. Top with the breadcrumbs and Parmesan cheese. Bake at 350 degrees F for 25 to 30 minutes.
