Bacon-Cheddar Potato Salad
D. McIntosh
A delicious potato salad featuring cheese, bacon and sour cream.
Ingredients
2 pounds small red potatoes cut in half
1/2 cup sour cream
1/2 cup milk
5 to 6 slices bacon, cooked and crumbled
1/2 teaspoon garlic powder
1 cup grated Cheddar cheese
Directions
Cook the potatoes in boiling water until tender, about 20 minutes. Drain. In a bowl, combine the sour cream, milk and garlic powder. Add the potatoes, grated cheese, crumbled bacon and salt and pepper to taste. Mix gently.
Suggestions
Variation: Mash the potatoes before adding the remaining ingredients for cheesy mashed potatoes.
