Black-Eyed Peas with Bacon
Black-eyed peas seasoned with bacon, garlic and thyme.
Ingredients
1 package (16 ounces) dried black-eyed peas, rinsed and sorted
1/2 pound bacon
1 onion, chopped
2 to 3 cloves of garlic, minced
1/2 teaspoon dried thyme
Salt and pepper, to taste
Directions
Fry the bacon in a large soup pot until crisp. Remove and set aside. Saute the onion in the bacon fat until soft. Add the black-eyed peas, crumbled bacon, garlic, and enough water to cover. Bring to boil, reduce heat, and simmer, covered, about one hour. Add the thyme, salt and pepper, and continue cooking another 30 minutes or so until the peas are tender.
Suggestions
Garnish with additional crumbled bacon and green onions.
