Broccoli and Corn Casserole


Ingredients

2 cans (16 ounces each) cream-style corn
1 package (10 ounces) frozen chopped broccoli, thawed
2 eggs, beaten
1 cup cracker crumbs
1/4 cup minced onion
4 tablespoons margarine
1 teaspoon salt
1/4 teaspoon pepper

Topping:
1/2 cup coarse cracker crumbs
2 tablespoons melted margarine

Directions

In a bowl, combine the corn, broccoli, eggs, onion, 4 tablespoons melted margarine, 1 cup cracker crumbs, salt and pepper. Mix well. Pour into a lightly greased baking dish.

Combine the 1/2 cup coarse cracker crumbs and 2 tablespoons melted margarine. Sprinkle over the top. Bake at 350 degrees F for 30 to 35 minutes.
