Carrots with Yogurt
Ingredients
1/2 pound carrots, coarsely grated
3 tablespoons olive oil
1 cup plain yogurt
3 cloves garlic, minced
Salt and pepper, to taste
Directions
In a bowl, combine the yogurt, garlic and salt and pepper to taste. Set aside.
Heat the olive oil in a large skillet. Add the carrots, salt and pepper and cook, stirring, about five minutes. Turn off heat and add the yogurt mixture. Stir, and then serve immediately.
