Cauliflower Hash
Recipe is from The Ultimate New York Diet (McGraw-Hill, 2006) by David Kirsch
Ingredients
Nonfat cooking spray
1/4 cup chopped shallots
1 cup steamed cauliflower florets
1/3 cup chopped celery
1/3 cup sliced roasted red peppers
1 teaspoon chopped fresh thyme
Salt
Pepper
Directions
Heat a medium nonstick skillet over medium heat, and coat with cooking spray. Add the shallots and cook for one to two minutes, until softened. Add the cauliflower and celery. Cook three to five minutes, until the vegetables begin to brown. Add the roasted red peppers and thyme. Cook for two minutes more. Season to taste with salt and pepper. Makes two servings.
