Cheesy Broccoli and Cauliflower Casserole
Ingredients
1 cup cooked white rice
1 box (10 ounces) frozen broccoli florets
1 box (10 ounces) frozen cauliflower florets
1/3 cup margarine
1 onion, chopped
1 package (16 ounces) processed cheese loaf, cut into cubes
1 can cream of chicken soup
1/2 cup milk
1 1/2 cups crushed buttery crackers
Directions
Cook the broccoli and cauliflower in a little water until crisp-tender. Set aside.
In a saucepan, melt the margarine. Add the onion and cook until soft. Add the broccoli, cauliflower, rice, cheese, soup and milk. Mix well. Pour mixture into 11x7-inch baking pan. Top with the cracker crumbs. Bake at 350 degrees F for 25 to 30 minutes.
