Creamy Corn Bake
Ingredients
1 tablespoon butter or margarine
1/2 cup chopped onion
1/4 cup butter, softened
2 packages (3 ounces each) cream cheese, softened
1 can (15 ounces) whole kernel corn, drained
1 can (15 ounces) creamed corn
1 can (4 ounces) chopped green chiles
1 can French-fried onions, divided
Directions
Melt the 1 tablespoon butter in a skillet. Add the onion and cook until soft.
While onion is cooking, combine the 1/4 cup butter and cream cheese in a bowl. Stir until combined. Stir in the whole kernel corn, creamed corn, green chiles and cooked onions. Pour mixture into a lightly-greased casserole dish.
Bake at 350 degrees F for 12 to 14 minutes. Remove from oven and stir in half the can of French-fried onions. Sprinkle the rest over the top. Return to oven and continue to bake for 10 to 12 more minutes.
