Crock Pot Scalloped Potatoes and Ham
Ingredients
2 pounds potatoes, thinly sliced
2 cups diced ham
4 tablespoons margarine
1 onion, chopped
1 can cream of mushroom soup
1/4 cup flour
1 teaspoon salt
Pepper, to taste
1 to 2 cups grated cheddar cheese
Directions
Place half of the sliced potatoes in a lightly greased Crock Pot. Top with half the onions, the flour, salt and pepper. Add the remaining potatoes and onions, then sprinkle on the remaining flour. Dot the top with the margarine, then pour the cream of mushroom soup over the top. Cover and cook on low for seven to nine hours. About 30 minutes before serving, sprinkle the grated cheese on top.
Suggestions
For a vegetarian meal, omit the ham.
