Minted Peas
Ingredients
3 tablespoons margarine
1 small onion, diced
1 1/2 teaspoons grated lemon zest
1 package (10 ounces) frozen baby peas, thawed
1 tablespoon fresh chopped mint
Salt and pepper, to taste
Directions
Melt the margarine in a saucepan. Add the onion and lemon zest. Cook until onion is soft. Add the peas. Season with salt and pepper and cook until heated through. Stir in mint and serve immediately.
Suggestions
Great with lamb, chicken or fish.
