Oven-roasted Asparagus
Recipe is from Peanut Butter Stew and Couscous, Too Quick, Healthy, Delicious Meals that Grown-Ups and Kids Love
Ingredients
Olive oil
Salt
Pepper
Lemon juice
1 tablespoon butter
4 to 5 asparagus stalks, per person
Directions
Wash asparagus and break off ends (bend the end of the stems until they break off naturally, rather than cutting). Toss asparagus with a little olive oil and roast for 10 minutes in a 500 degree F preheated oven. Sprinkle with salt, pepper and lemon juice. Toss with 1 tablespoon butter, sprinkle salt and pepper, and bake at 450 degrees F for 15 minutes more.
