Roasted Tomatoes
Donna Smith
Ingredients
3 medium tomatoes, cut in half
2 to 3 cloves garlic, sliced
Oil olive
Honey
Balsamic vinegar
Salt and pepper, to taste
Directions
Poke a few small holes in the bottoms of the cut tomatoes (this will allow the excess moisture to escape). Place the tomatoes into a baking dish. Top each with a couple slices of garlic. Drizzle each tomato with a little honey, olive oil and balsamic vinegar. Season with salt and pepper. Bake at 325 degrees F for one to one and a half hours. Garnish with some fresh parsley.
Suggestions
These are great as a side dish, as a first course, or chopped up and served over pasta.
