Steamed Carrots and Apricots
Recipe is from Peanut Butter Stew and Couscous, Too Quick, Healthy, Delicious Meals that Grown-Ups and Kids Love
Ingredients
1/2 cup apricots
2 cups carrots
1 tablespoons butter
Directions
Steam or boil carrots until soft and drain.
Microwave 1/2 cup apricots in water for five minutes and let stand for five minutes. Drain and cut into thin strips.
Steam 2 cups carrots until tender (five to eight minutes) and drain. Over low heat, mix carrots, apricots and 1 tablespoon butter. Warm for two minutes.
Suggestions
To save time, keep a bag of baby carrots handy in the refrigerator. They're already washed and peeled and that means less work for you!
